Ever wonder how to prepare an artichoke? They can be tough. Think an artichoke is a vegetable? It isn’t. It is an unusual variety of thistle. They are a rich source of fiber and are low in saturated fat and cholesterol. They are ranked number 7 out of 1,000 different plant types in antioxidant levels! So if you haven’t been eating artichokes, you should start now! Some additional benefits of artichokes are:

  • Lower cholesterol
  • Protect against diseases such as diabetes, heart attack, and stroke
  • Have long been famous for detoxifying the body and improving the health of the liver

  1. Use a serrated knife to cut off end of artichoke and the top
  2. Use scissors to clip pointy ends of leave (be careful sometimes these are sharp)
  3. Use serrated knife to cut artichoke down the middle
  4. Use a spoon to scoop out the hair from the middle of both sides
  5. Place artichoke (inside facing down) in a pot with a steamer and about an inch of water
    1. Steam for 10-15 minutes
  6. Remove from steamer and lightly drizzle with salt and pepper and olive oil
  7. Place on grill for 5 minutes
  8. Enjoy!
